With over 30 years of experience as a chef, I have devoted my life to food. But the heart of my culinary journey began while living in Corfu, Greece, where i fell in love with the Mediterranean-its flavors, its traditions, and its people. The cuisine stayed with me long after I returned home, and I knew it was something I wanted to bring to others.

Our Mediterranean food truck is the realization of a lifelong dream. It represents not just my passion, but also the unwavering support of my wife. Without her, this dream would never have become a reality.

Souvlaki-(From the Greek souvla= skewer) is one of the oldest known grilled meat preparations in the world.

Originally, souvlaki was made with pork or lamb, which were the most available meats.

Chicken Souvlaki became popular much later, around the 20th century

By the mid/late 1900s, chicken souvlaki became a standard option throughout Greece.

We combine traditional preparations with local ingredients for dishes that are authentic to both their Greek and Mediterranean origins in a Colorado setting.
